Rob's Mrs. Dash Chicken & Pasta Recipe

(Great tastin and Good for ya!)

 

Ingredients: (This is what we use for two people)

Mrs. Dash - Garlic Flavor

2 Tlbs Extra Virgin Olive Oil (approx)

3 - 4 Cloves of Garlic

#9 Spaghetti  (We use the small box for two people)

1 - 2 skinless/boneless Chicken Breast - cut & slice into small pieces

1 small can of sliced black olives (Drained)

1 small can of slice mushrooms (Drained)

1 Can of Diced Tomatoes (Basil & Oregano - Del Monte - see picture)

 

 Directions:

  1. Put a large pan of water on to boil for spaghetti. (You can gather ingredients while it start to heat up)
  2. While water is coming to boil, put olive oil in a flat bottom frying pan and warm to med heat.  Put slice/lightly crushed garlic cloves in with the olive oil at a low to med-low heat.  You need to be careful not to burn the garlic!
  3. When the olive oil and cloves sauté for about a minute, it should be time to place the spaghetti in the rolling boiling water.  A little salt mixed in with the water is not a bad thing to add. Place the spaghetti in the water and set your timer for 10 minutes.
  4. Place chicken pieces in the olive oil and garlic and fry on med heat - turning frequently for about two minutes.  As the chicken cooks I usually make the pieces smaller by chopping with the spatula.
  5. Sprinkle liberally the chicken/olive oil/garlic with Mrs. Dash and continue frying for an additional 2 minutes.
  6. Now add the diced tomatoes, black olives and mushrooms.  Bring the heat to slightly above medium.
  7. Simmer the Chicken, Tomatoes, Olives and Mushrooms until the Pasta is read to strain (remember the 10 minute timer)
  8. Drain Pasta, and place on plates and divide the pan and contents between the portions.
  9. Goes great with garlic bread, and I sprinkle freshly grated parmesan cheese on top.

 

Adjust the ingredients for your need.  Do not be stingy with the Mrs. Dash.
